Cold and sunny

Well the wind has stopped only to be replaced with the bitter cold. This is the first day in the past week or so that Matt has not received a phone call at 3am asking him to come in and plow. He is going to take advantage of this and sleep in. Then he has a basement to fix, along with a window. The other night the wind blew out one of my window panes, that window is old so I had plastic on it, We wouldn't have known the pane was out if not for actually seeing my black cat Cloe trapped in between the plastic. I'm glad I wasn't the one to discover this my husband was, it was hilarious.I went out side to inspect the damage and there on the snow sat the pane in one piece.I have started my Christmas cookies. I am going to make one of my husbands favorite cookies.

Double Chocolate Cookies
Yields: about 9 dozen

1-1/4 cups butter softened
2 cups sugar
2 eggs
2 tsp vanilla
2-1/2 cups flour
3/4 cups baking cocoa
1 tsp baking soda
1/2 tsp salt
2 cups chocolate chips(12 ounces)

1. cream butter and sugar until smooth, beat in eggs and vanilla. combine the flour, cocoa, baking soda and salt. Mix well then add chocolate chips.
2. drop onto greased cookie sheet bake @ 350 for 8-10 minutes. let sit for 2 minutes, then enjoy!

  1. Dawn, that recipe sounds like it should be right here, right now!!!! I love anything chocolate! I need to get some grocery shopping done so I can start my peanut butter pie for the holidays. I have my chocolate crust. I need to look at my recipes tonight and see what else I can do.

  2. I can't make the PB pie--too much freezer transportation. drats! I decided on Tollhouse Pie instead.

    I have had these cookies and they are so GOOD!
